Wow... I'm impressed that you are attempting Taiwanese! It is a rather difficult language in that it has so many more tones than Mandarin (and it changes regionally! YIKES!)!
I just wanted to let you know that there are a couple of books available (in English!) which my friend was using last year at the University of Tainan. These books were from the Mary Knoll Language Service Center.
Although the edition my friend got was printed in 1989, this address may still be valid... here's their address from the book, if you want to try and contact them:
